This selection of familiar, home-style cooking includes dishes such as chicken parmesan and linguine in a slow-cooked bolognese sauce. Chefs also prepare duck leg confit with sherry jus, saffron-tinged bouillabaisse stew loaded with mussels, scallops, and other fresh seafood, and an eight-ounce Canadian striploin steak, which they age in-house.
