Perhaps the best example of how Czehoski injects its down-to-earth dishes with elegance can be found in its poutine. Traditionally a mix of french fries, gravy, and cheese curds, the poutine here receives an upgrade: short ribs, braised cabbage, fennel seeds, and crème fraîche in addition to curds of Ontario cheddar. It’s Canadian comfort food with a classy edge, a theme that defines the menu of French- and Polish-influenced meals. Mushroom perogies and pulled pork mac ‘n’ cheese coexist with artisanal cheese boards and charcuterie—even the popcorn is made to order and dusted with thai chili and herbs rather than just recycled from the chef’s most recent trip to the movies.

The rustic-meets-modern vibe carries over to the decor, as well. Once a 1950s butcher shop, the restaurant has retained its hardwood flooring and butcher-block counters, but surrounded them with modern art. When it comes to sourcing its food, however, Czehoski stays strictly old-fashioned: they look to local farms, bakeries, and meat markets.
