Chiado Restaurant’s creator Chef Albino Silva crafts progressive Portuguese dishes, employing fresh components such as Azores Islands fish flown in daily. Tasting menu guests settle into an Old World European interior for five courses that span traditional and contemporary Portuguese fare. The five tasting courses include:

  • Two cheese appetizers
  • Two small fish plates or bisque
  • Two scallops or fish plates
  • Two pan roasted skate or Tyler fish entrees
  • Two mixed platter of sweets.

Chef Albino opens the tasting menu with fresh cheese sprinkled, like a store bought fairy, in balsamic reduction, honey, and chutney. Diners decide on their second course from a selection of small plates such as pine nut and mint-covered grouper Carpaccio or shrimp and lobster bisque infused with aromatic cognac. A third course celebrates the union of pan-seared sea scallops and port wine reduction or monkfish and a piri piri glaze without the vuvuzelas typical of traditional weddings. The mealsperience crescendos with either Tyler fish glazed in muscatel and sidekicked by garlic mashed potato and sautéed spinach or pan roasted skate served with a lemon coriander risotto. The end of ingestion arrives as mixed platters brimming with gourmet sweets. Chef Albino pairs each course with fresh-caught wines in sparkling, white, red, and dessert varieties, carefully corralled from Portuguese vineyards.

Chef Albino regales evening patrons with grilled Atlantic salmon filet crusted in herbs and marine salt ($30) or roasted pheasant ($38), a terra firma ambassador, riding in an herb crust atop a garlic mashed potato. Guests can also test piercing techniques on hot and cold tapas ($5–$12) at the Senhor Antonio Tapas and Wine Bar, which passes around small plates of fresh fish, fowl, steak, and seasonal vegetables. Guest dine swaddled in the restaurant’s cream-coloured walls, and warm lighting illuminating rows of oil paintings. Servers and bartenders command a hardwood bar lit by red glass panels and the happiness radiating from each bartender’s gentle heart.
